Baileys Three Ingredient Christmas Cake

Quick Easy & Delicious & Just Three Ingredients!


Ingredients:
  • 1kg mixed dried fruit
    [add some mixed peel if desired, but maintain the 1kg quantity].
  • 600ml Baileys Irish Cream
  • 300g Self-Raising Flour

Method:
  1. Soak the fruit: Place the mixed fruit in a large bowl and pour the Baileys over it.
    Stir to coat the fruit, cover the bowl, and leave it to soak overnight (or for at least a few hours).
  2. Combine ingredients: The next day, preheat your oven to 160°C (320°F).
    Add the self-raising flour to the soaked fruit mixture and stir until just combined. Be careful not to over mix!
  3. Bake the cake: Line a cake tin with baking paper. Pour the mixture into the tin, making sure to tap out any air pockets.
    Bake for approximately 2 to 3 hours, or until the cake is cooked through.
    A skewer inserted into the centre should come out with moist crumbs.
    If the top starts to brown too quickly, you can cover it loosely with foil.
  4. Cool and Serve: Allow the cake to cool in the tin before removing from baking tin.
    Store in an airtight container.
  5. It can be enjoyed immediately or stored for up to 10 days.
